Dab meat dry. Cook pasta in boiling salted water for about 10 minutes. Wash the rocket, dab dry and tear into smaller pieces. Warm the sauce, refine with 2 tablespoons of lemon juice and zest.
Season with salt and pepper. Heat oil in a large pan, fry steaks for 3-4 minutes on each side, remove and season with salt. Drain the noodles and mix with the rocket. Arrange noodles, sauce and steaks on plates.
Sprinkle steaks with coloured pepper. Garnish with rosemary sprigs.
