Banana-cinnamon rings

Ingredients

  • 1 soft banana (120 g with peel)
  • 200 g soft vegan margarine (e.g. Alsan)
  • 100 g Sugar
  • 1 TEASPOON ground cinnamon
  • 7-10 Tbsp Salt
  • 300 g Flour
  • 3-4 Tbsp Rice or almond drink
  • 125 g Icing sugar
  • 7-10 Tbsp silver and red sugar beads
  • baking paper
  • 7-10 Tbsp Piping bag
  • 7-10 Tbsp Freezer bag

Directions

    Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Line two baking trays with baking paper. For the dough, peel the banana and crush it with a fork in a mixing bowl.

    Add soft margarine, sugar, cinnamon and 1 pinch of salt. Whisk with the whisk of the mixer until light creamy. Add flour and 2 tablespoons of rice drink. Stir briefly to a smooth dough.

    Pour the dough into a piping bag with a medium star-shaped spout. Spray rings (approx. 5 cm Ø each) onto the trays. Bake one after the other in a hot oven for 9-11 minutes. Remove and let cool on a cake rack.

    For the icing, stir icing sugar and 1-2 tbsp. rice drink to a thick icing smooth. Pour into a freezer bag. Cut off one corner and spray on the curls. Decorate with sugar beads. Let the icing dry.
