Banana bread with cinnamon swirl

Ingredients

  • 4 Bananas (approx. 160 g each)
  • 60 g Butter or margarine
  • 150 g Sugar
  • 6 TABLESPOONS Sugar
  • 7-10 Tbsp Peel of 1 organic lemon
  • 1 package Vanillin sugar
  • 4 Eggs (size M)
  • 500 g Flour
  • 1 package Baking Powder
  • 5 TABLESPOONS Milk
  • 3 TABLESPOONS ground cinnamon
  • 1 TEASPOON ground cinnamon
  • 1 TEASPOON Icing sugar
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Aluminium foil

Directions

    Peel the bananas and crush them finely with a fork. Beat the banana puree, fat, 150 g sugar, lemon peel and vanillin sugar with the whisk of the hand mixer until foamy. Stir in the eggs one after the other. Mix flour and baking powder and stir in alternately with milk.

    Mix 3 tablespoons cinnamon and 6 tablespoons sugar in a bowl. Pour 1/3 of the dough into a greased, flour-blended ring cake mould (approx. 2.5 litres capacity). Spread half of the cinnamon-sugar mixture in the middle of the dough. Repeat this step and finish with the last third of the dough. Bake the cake in a preheated oven (electric cooker: 175 °C/ circulating air: 150 °C/ gas: see manufacturer) for approx. 1 hour (stick test). After approx. 45 minutes, cover with aluminium foil if necessary.

    Remove the cake from the oven, let it cool on a cake rack, then remove it from the mould. Dust with icing sugar and 1 tsp. cinnamon. Whipped cream tastes good with it.
