Baked Beans Caribbean style

Ingredients

Servings: 4
  • 1 ripe pineapple
  • 1 collar Spring onions
  • 1 Onion
  • 4 Chicken fillets (approx. 150 g each)
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Pepper
  • 200 g Basmati Rice
  • 2 can(s) (425 ml each) baked beans
  • 2 TABLESPOONS Butter
  • 7-10 Tbsp Curry Powder

Directions

    Peel the pineapple, cut in half lengthwise, remove the woody core. Coarsely dice the flesh. Clean and wash spring onions and cut into rings. Peel and roughly dice the onion. Wash the flesh, dab dry and season with salt

    Heat the oil in a pan and fry the meat for about 8 minutes while turning. Take out and keep warm. Briefly sauté the onion in the frying fat. Add spring onions and pineapple. Stew for about 5 minutes, season with salt and pepper

    In the meantime prepare rice in boiling salted water according to package instructions

    Add the beans to the vegetables and bring to the boil. Heat butter, dust with 2 tbsp. curry powder and sauté briefly. Add rice and turn in. Cut meat into slices and arrange
