Baked apple natas

Ingredients

  • 7-10 Tbsp a little + 2 tablespoons butter
  • 1 package (270 g) fresh puff pastry (refrigerated shelf; e.g. Aunt Fanny)
  • 7-10 Tbsp a little + 1 tablespoon flour
  • 250 g sour apples (e.g. Cox Orange)
  • 5 TABLESPOONS Lemon juice
  • 3 TABLESPOONS + 150 g sugar
  • 7-10 Tbsp cinnamon, salt
  • 1 Vanilla pod
  • 1⁄4 l Milk
  • 1 egg + 3 egg yolks (size M)
  • 250 g flaked almonds
  • 7-10 Tbsp Icing sugar

Directions

    Grease the recesses of a muffin tray (12 recesses). Cut baking paper into 12 strips (each approx. 4 cm wide; 12 cm long) and line each trough with a strip. Roll out the dough, roll out slightly larger (approx. 26 x 45 cm).

    and cut out circles (approx. 10 cm Ø each; e.g. with a cappuccino cup). Lay the dough remains on top of each other on a little flour (do not knead!), roll out again. Cut out further circles (12 in total).

    Place the dough circles in the troughs and press on the edges. Cold place.

    Wash, quarter, core and finely dice apples. Heat lemon juice, 2 tablespoons butter and 3 tablespoons sugar in a pan. Add apples and simmer everything for 3-4 minutes. 1⁄4 Stir in tsp. cinnamon. Remove from heat.

    Drain the apples in a sieve, collecting the apple-butter-syrup.

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: see manufacturer). Cut the vanilla pod open lengthwise and scrape out the pulp. Bring milk, vanilla pod and vanilla pulp to the boil in a pot. Mix 1 tablespoon flour, 150 g sugar and a pinch of salt, stir into the milk and bring to the boil again.

    Remove the pot from the stove and let it cool down a little. Remove vanilla pod. Stir egg and egg yolk into the cream. First spread apples, then the cream into the hollows. Bake in a hot oven for about 20 minutes.

    Mix the almonds with the apple syrup. After about 10 minutes, remove the muffin tray, spread the almonds on the natas and finish baking. Take them out and let them cool down briefly. Use the strips to lift them out of the trays.

    Dust with icing sugar.
