Ingredients

  • 1 piece(s) Ginger root (approx. 5 g)
  • 1 small, red chili pepper
  • 1 Organic Lemon
  • 4 TABLESPOONS White wine vinegar
  • 4 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 g Mozzarella cheese
  • 1 (approx. 200 g) Apples
  • 1 (approx. 300 g) Avocado
  • 6 Stem(s) Basil

Directions

    Peel and finely dice the ginger. Clean the chilli, cut lengthwise, wash and remove the seeds. Cut the pod into small pieces. Wash lemon and grate dry. Grate half of the peel. Halve the lemon and squeeze the juice from one half.

    Use the rest of the lemon for other purposes. Mix ginger, chilli, vinegar, lemon peel and lemon juice. Add oil and season to taste with salt and pepper.

    Cut the mozzarella into small cubes. Peel apple, remove core and dice finely. Cut avocado in half, remove stone and peel flesh. Dice the fruit flesh finely. Mix apple and avocado cubes.

    Wash basil, dab dry, pluck leaves from the stems and cut into fine strips. Place ingredients alternately in glasses, drizzle with vinaigrette and serve immediately.
