Asparagus with hollandaise sauce and sausage

Ingredients

  • 750 g Asparagus
  • 7-10 Tbsp Salt
  • 60 g Butter
  • 1 pinch Sugar
  • 1 Pouch preparation for sauce Hollandaise style
  • 1/2 bunch flat leaf parsley
  • 2 TABLESPOONS Oil
  • 2 coarse fried sausages (à approx. 125 g)

    Peel the asparagus and cut off the lower woody ends. Wash the asparagus and cook in boiling salted water with 10 g butter and a little sugar for about 15 minutes. In the meantime, stir the contents of the sauce bag into 200 ml cold water with a whisk and bring to the boil. Add the rest of the butter in pieces and let it melt while stirring further. Bring to the boil again briefly. Wash the parsley and chop it finely, except for something to garnish, and add it to the sauce.

    Heat the oil in a pan. Pierce the sausages several times with a fork and fry them over medium heat for about 10 minutes, turning them over. Cut the sausages into diagonal pieces. Arrange on a preheated plate with the asparagus and sauce. Garnish with parsley. Small new potatoes taste good with it
