Asia broccoli with duck breast

Ingredients

Servings: 4
  • 2 Duck breasts (approx. 250 g each)
  • 3 TABLESPOONS Oil, because of possible
  • 2 TABLESPOONS Sesame Oil
  • 1 kg Broccoli
  • 1 medium onion
  • 1 (approx. 500 g) ripe mango
  • 3 tablespoons (50 g) Cashew nuts
  • 1 TEASPOON Vegetable broth (instant)
  • 1/2 red chilli pepper or 1/2 tsp Sambal Oelek
  • 5 TABLESPOONS Soy sauce
  • 7-10 Tbsp salt, white pepper
  • 1 pinch Sugar

Directions

    Wash duck breasts, pat dry and make a diamond-shaped incision in the skin. Heat 1 tablespoon of oil in a frying pan. Sauté the duck breasts with the skin side first. Then also fry on the meat side. Fry over medium heat for 20-25 minutes, turning over more often.

    Clean and wash the broccoli and cut it into small florets. Peel and finely chop the onion. Peel the mango and cut into slices from the stone

    Heat 2 tablespoons of sesame oil in a large frying pan. Sauté the onion until transparent. Add cashew nuts and fry. Then fry the broccoli briefly. Deglaze with 1/4-3/8 l water, bring to the boil. Dissolve broth in it. If necessary, clean and wash the chilli and cut into rings. Stir in soy sauce, chilli or Sambal Oelek. Cover and simmer for 6-8 minutes. Add the mango and cook for about 4 minutes

    Season broccoli with salt, pepper and sugar. Cut open the duck breast. If necessary, deglaze with a little water, season to taste and pour over the meat. Serve everything. Served with: Rice
