For the amaretti, beat 2 egg whites until stiff. Add 25 g sugar. Add flavour. Mix ground almonds and 75 g sugar. Fold into the beaten egg white in portions.
Use 2 teaspoons to place small heaps on a baking tray lined with baking paper. Leave to dry for 2 hours. Then brush with 1 egg white and sprinkle with sugar crystals. Dry in a preheated oven (electric cooker: 150 °C/ circulating air: 125 °C/ gas: level 1) for approx. 1 hour more than baking
