Amarena Marzipan Strips

Ingredients

  • 250 g + some flour
  • 1/8 l Milk
  • 4 (60 g) slightly heaped tablespoons of sugar
  • 1/2 cube (21 g) fresh yeast
  • 3 Eggs (size M)
  • 25 g soft butter/margarine
  • 1 pinch Salt
  • 200 g Marzipan raw mass
  • 5 TABLESPOONS Amaretto liqueur
  • 1 jar (250 g) Jam "Amarena cherry" or cherry
  • 2-3 TABLESPOONS flaked almonds
  • 7-10 Tbsp Icing sugar
  • baking paper

Directions

    Put 250 g of flour in a bowl and make a depression in the middle. Warm the milk and 1 tablespoon of sugar lukewarm. Crumble yeast into it and dissolve it. Pour into the hollow, mix with some of the flour to make a pre-dough. Cover and leave to rise in a warm place for about 15 minutes

    Separate the eggs, keeping 2 and 1 egg whites separately in a cool place. Add 3 egg yolks, 2 tablespoons of sugar, fat and salt to the pre-dough. Knead with a hand mixer until smooth. Cover and leave to rise in a warm place for approx. 30 minutes

    Line baking tray with baking paper. Coarsely grate the marzipan, stir the liqueur with the dough hooks of the hand mixer until creamy. Beat 2 egg whites until stiff, while trickling in 1 tbsp. sugar. Stir half into the marzipan, fold in the rest

    Do not knead the soft yeast dough. Form into a roll of approx. 65 cm length on a well floured surface, pressing and pulling carefully. Place the dough on the baking tray in a serpentine line, approx. 20 cm wide and close together. Pour marzipan cream in strips with a spoon

    spread 1/3 jam in thin strips in between

    Whisk 1 egg white. Spread a thin layer of the whisk onto the free dough. Sprinkle with almonds. Leave uncovered in a warm place for about 15 minutes

    Grate the cheese and sprinkle on the crêpes. Bake in the preheated oven (electric cooker: 200°C/circulating air: 175°C/gas: level 3) for approx. 15 minutes. Wash the chives, shake dry, cut into fine rolls and sprinkle on top.
