Amalfi fruit gratin

Ingredients

  • 7-10 Tbsp Pour 6 pers
  • 800 g mixed red fruits (fresh or frozen)
  • 8 cl de Limoncello (alcool italian au citron)
  • 6 egg yolks
  • 15 cl de vin blanc
  • 80 g de sucre en poudre
  • 2 tbsp. brown sugar

Directions

    1 Wash and dry the fresh fruit. Leave the fruit frozen for 20 minutes at room temperature. Spread the fruit (fresh or frozen) in the bottom of an oven dish.

    2 Preheat the oven to the broil position. Whisk the egg yolks, powdered sugar and white wine in a bowl. Then place the bowl in a bain-marie on a pan of hot water and whisk until the mixture triples in volume.

    3 Remove from the heat and whisk in the Limoncello, then pour this sabayon over the berries. Sprinkle the surface with brown sugar and bake until a light golden crust is formed. Serve immediately.
