Almond milk rice with grapes

Ingredients

  • 1/2 Vanilla pod
  • 3/4 l Milk
  • 150 g Rice Pudding
  • 1 pinch Salt
  • 3 tablespoons (30 g) Sugar
  • 200 g dark and light grapes
  • 7-10 Tbsp (e.g. seedless)
  • 1-2 TABLESPOONS flaked almonds
  • 100 g Whipped cream

Directions

    Cut the vanilla pod lengthwise and scrape out the pulp

    Bring the milk, rice, lemon zest, salt, vanilla pod and pulp to the boil. Stir in sugar. Cover and allow to swell for approx. 30 minutes over a low heat. Stir more often

    Remove the vanilla pod and lemon peel. Fill the rice into bowls and let it cool

    Wash the grapes, dab dry and pluck from the stalks. Cut the grapes in half and possibly remove the seeds. Roast almonds in a pan without fat, remove and let them cool down

    Whip the cream until stiff and fold into the rice pudding. Fold in one half of the grapes as well. Sprinkle rice with the remaining grapes and almond flakes
