Yeast cake with apples, marzipan and almonds

Ingredients

  • 500 g Flour
  • 250 ml Milk
  • 1 cube (42 g) fresh yeast
  • 75 g + 2 tablespoons sugar
  • 1 untreated lemon
  • 50 g soft butter
  • 1 egg (size M)
  • 7-10 Tbsp Salt
  • 1 package Vanillin sugar
  • 6 small apples, e.g. magpie
  • 200 g Marzipan raw mass
  • 100 g Almond slivers
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease
  • baking paper
  • 7-10 Tbsp Aluminium foil

Directions

    For the yeast dough, pour flour into a bowl and press a depression into it. Warm the milk lukewarm. Crumble the yeast into the hollow, add 25 g sugar and 100 ml lukewarm milk. Mix with some flour from the edge to a thick mash. Cover the dough and let it rise in a warm place for about 10 minutes. Wash the lemon, grate dry and thinly grate the peel.

    Halve the lemon and squeeze one half. Add butter, egg, 50 g sugar, 1 pinch of salt, vanillin sugar, lemon zest and 150 ml lukewarm milk and knead to a smooth dough with the dough hooks of the hand mixer. Cover the dough and let it rise for about 30 minutes until the dough has doubled. Briefly knead the yeast dough again and roll out rectangularly (approx. 41 x 32 cm; size of the fat pan) on a floured work surface. Grease the fat pan of the oven and place the dough on top. Cover and leave to rise for approx. 10 minutes in a warm place. Wash apples, grate dry and cut out the core. Cut apples into thin slices and sprinkle with lemon juice. Grate marzipan directly onto the dough, then cover with apple slices in a fan shape. Sprinkle the cake with 2 tablespoons of sugar and almond slivers. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-30 minutes (if the almonds get too dark, cover the cake with aluminium foil) Let them cool down.

    Cover and leave to rise for approx. 10 minutes in a warm place. Wash apples, grate dry and cut out the core. Cut apples into thin slices and sprinkle with lemon juice. Grate marzipan directly onto the dough, then cover with apple slices in a fan shape. Sprinkle the cake with 2 tablespoons of sugar and almond slivers. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-30 minutes (if the almonds get too dark, cover the cake with aluminium foil) Let them cool down. Cut into pieces and serve. Whipped cream tastes good with it
