Walnut and apple cake with Calvados glaze

Ingredients

  • 150 g Walnut kernels
  • 7 small apples (e.g. Elstar; 700-800 g)
  • 160 g Butter or margarine
  • 175 g Sugar
  • 1 package Vanillin sugar
  • 3 Eggs (size M)
  • 175 g Flour
  • 1 TEASPOON Baking Powder
  • 1 pinch Salt
  • 2 TABLESPOONS Milk
  • 3-4 Tbsp Calvados
  • 7-10 Tbsp Fat and breadcrumbs

Directions

    Roughly chop the walnuts. Beat 125 g fat, 100 g sugar, vanillin sugar and salt until creamy with the whisk of the hand mixer. Stir in the eggs one after the other. Mix flour and baking powder. Alternately stir in with the milk.

    Fold in half the walnuts. Fill the dough into a greased and breadcrumbed springform pan (26 cm Ø), smooth it down. Peel and halve apples and remove the core. Cut the round surface of the apple halves several times with a knife. Spread the apple halves with the round sides facing upwards. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes. Melt 75 g sugar until golden brown, remove from the heat and stir in 35 g fat. Gradually add Calvados and stir until smooth. Stir in remaining walnuts.

    Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes. Melt 75 g sugar until golden brown, remove from the heat and stir in 35 g fat. Gradually add Calvados and stir until smooth. Stir in remaining walnuts. Spread the icing on the cake and bake for another 10 minutes. Take out the cake and let it cool in the tin
