Vegetable stew with meatballs

Ingredients

  • 150 g spring onions
  • 1 Garlic clove
  • 250 g Courgette
  • 1 (approx. 250 g) yellow or orange pepper
  • 1 (approx. 400 g) Head broccoli
  • 400 g waxy potatoes
  • 2 TABLESPOONS Olive oil
  • 1 l Vegetable broth (instant)
  • 1-2 Bay leaf
  • 1 (approx. 130 g) fine uncooked bratwurst
  • 1/2 bunch Chives
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Onions peel and cut into slices. Peel garlic and chop finely. Wash, clean and chop the zucchini. Quarter peppers, remove seeds, wash and cut into strips. Clean and wash broccoli and cut florets from the stalk. Peel potatoes and cut into slices. Heat oil in a pot, fry onion slices and garlic.

    Deglaze with broth, add potato wedges and bay leaf and simmer for about 15 minutes. In the meantime press the sausage meat out of the skin. Add the dumplings, zucchini, paprika and broccoli 5 minutes before the end of the cooking time and cook. Wash the chives, dab dry and cut into fine rolls. Season stew with salt and pepper. Stir in chives rolls
