Ingredients

  • 150 g Flour
  • 125 g Sugar
  • 25 g Coconut flake
  • 1 pinch Salt
  • 2 packages Vanillin sugar
  • 3 Eggs (size M)
  • 125 g Butter
  • 2 (60 g each, from the can) Pineapple Rings
  • 3 (30 g each, from the can) Peach halves
  • 150 g Cherries (from the glass)
  • 200 g Low-fat curd
  • 200 g Mascarpone
  • 1 package Pudding powder "Vanilla Flavor"
  • 1 TEASPOON Icing sugar
  • 7-10 Tbsp Flour

Directions

    For the shortcrust pastry, put 125 g flour, 50 g sugar, grated coconut, salt, 1 packet of vanilla sugar, 1 egg and 50 g butter in flakes in a mixing bowl. Knead with the dough hooks of the hand mixer to a smooth dough. Cover and put in a cool place for about 30 minutes. In the meantime cut pineapple and peaches into pieces. Dab the cherries with kitchen paper. Roll out the dough to a circle (28 cm Ø) on a well floured work surface.

    Carefully put the dough into a greased springform pan (20 cm Ø). Press the edge of the dough against the edge of the springform pan. Prick several times with a fork. Put the base in a cool place again. In the meantime put the remaining eggs, sugar, vanilla sugar and butter, curd cheese and mascarpone into a mixing bowl and mix well with the whisk of the hand mixer. Stir in the pudding powder well. Dust the fruits in a bowl with the remaining flour. Fold the fruits into the quark cream. Remove the springform pan from the fridge and spread the cream evenly on the base. Bake in the preheated oven (electric cooker: 175 °C/ gas: level 2) for 60-65 minutes. If necessary, cover the cake halfway through the baking time. Take the cake out of the oven, place it on a grid and immediately remove it from the edge of the springform pan with a knife.

    Dust the fruits in a bowl with the remaining flour. Fold the fruits into the quark cream. Remove the springform pan from the fridge and spread the cream evenly on the base. Bake in the preheated oven (electric cooker: 175 °C/ gas: level 2) for 60-65 minutes. If necessary, cover the cake halfway through the baking time. Take the cake out of the oven, place it on a grid and immediately remove it from the edge of the springform pan with a knife. Let the cake cool down in the mould. Then remove from the mould and serve dusted with icing sugar as desired.
