Torn lasagne noodles with pumpkin sauce

Ingredients

  • 1 Hokkaido pumpkin (about 1,2 kg)
  • 2 TABLESPOONS Olive oil
  • 2 TABLESPOONS liquid honey
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 packages (each 400 g ; 4 pieces) Maultaschen (cooling shelf)
  • 2–3 l Vegetable broth
  • 100 g Chorizo Sausage
  • 1 red chilli pepper
  • 1 small clove of garlic
  • 100 ml Milk
  • 100 g Whipped cream
  • 4-5 stems Oregano
  • 150 g Feta cheese
  • 20 g Roasted onions

Directions

    Wash the pumpkin, cut in half, remove the seeds. Cut pumpkin into slices. Spread about 500 g of the slices on a baking tray. Sprinkle with oil and 1 tbsp. honey, season with salt and pepper and bake in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for about 20 minutes.

    In the meantime, cook the Maultaschen in hot stock for 10-12 minutes according to the package instructions.

    In the meantime, remove the skin from the sausage and cut the sausage into thin slices. Clean the chilli, cut lengthwise, wash and remove the seeds. Cut the pod into small pieces. Add the sausage slices, Maultaschen and chilli to the pumpkin slices and bake for another 10 minutes.

    In the meantime cut the rest of the pumpkin into pieces. Peel garlic and chop finely. Heat milk, cream, garlic and 1 tablespoon honey in a pot. Add pumpkin and cook covered for 8-10 minutes, stirring occasionally. Wash oregano, shake dry, remove leaves from the stalks and add to the pumpkin milk, except for a few for sprinkling. Mix finely with a hand blender. Season to taste with salt and pepper.

    Drain and crumble the cheese. Take the pumpkin, Maultaschen and sausage out of the oven, spread some sauce on them, sprinkle with cheese, fried onions and the rest of the oregano.
