Clean and wash spring onions and cut into fine rings. Put the green onion rings aside. Wash and halve the tomatoes. Wash the crayfish meat and drain well. Cook the noodles in boiling salted water according to the instructions on the packet.
Melt crab or lobster butter in a pot. Fry the white onion rings in it. Add the coconut milk and curry paste and let everything simmer for about 8 minutes. Drain the pasta and let it drain well. Add the tomatoes to the sauce and cook for about 2 minutes.
Then add crab meat and mix in. Season the sauce with salt and mix the noodles into the sauce. Sprinkle with leek and onion rings. At the table sprinkle with Sriracha sauce (if you like it hotter)
