Ingredients

  • 60 g Butter or margarine
  • 80 g Flour
  • 1/4 l Milk
  • 7-10 Tbsp salt, white pepper
  • 50 g raw ham (e.g. Spanish Serrano ham)
  • 3 Eggs (size M)
  • 5 TABLESPOONS Breadcrumbs
  • 1 l Olive oil
  • 3 Garlic cloves
  • 7-10 Tbsp Juice of 1 lemon
  • 4 Peppercorns
  • 2 Bay leaves
  • 2 stem(s) Thyme
  • 250 g Mushrooms
  • 1 small red chili pepper
  • 12 prawns ready to cook (approx. 20 g each)
  • 500 g Potatoes
  • 1 medium onion

Directions

    Melt the fat and sweat the flour in it. Stir in milk. Season with salt and pepper. Chill for 3-4 hours. Dice ham finely and stir in. Form 16 croquettes from it.

    First turn in 1 whisked egg, then in breadcrumbs. Fry in 1/2 l oil. Peel and chop 1 garlic clove. Boil up with 1/8 l oil, lemon juice, peppercorns, 1 bay leaf, thyme, 1/2 teaspoon salt and 1/8 l water. Simmer for about 20 minutes. Clean, wash and cut the mushrooms into thick slices. Bring the mushrooms to the boil in the stock, cool. Peel 2 cloves of garlic, cut into slices. Remove seeds from chillies, wash and chop. Remove the shrimps from their shells, remove the intestines, wash and dab dry. Fry in 2 tablespoons of oil with 1 bay leaf for about 5 minutes. Fry chilli and garlic briefly, season.

    Peel 2 cloves of garlic, cut into slices. Remove seeds from chillies, wash and chop. Remove the shrimps from their shells, remove the intestines, wash and dab dry. Fry in 2 tablespoons of oil with 1 bay leaf for about 5 minutes. Fry chilli and garlic briefly, season. Peel, wash and slice the potatoes. Fry in 1/8 l oil while turning for about 20 minutes, salt. Peel and chop onion. Add after 10 minutes. Pour off oil. Whisk 2 eggs, season and pour over the potatoes. Allow to set
