Swedish yeast bread (Vetebröd) with cardamom

Ingredients

  • 4–5 Cardamom Capsules
  • 325 ml Milk
  • 1 cube (42 g) Yeast
  • 500 g Flour
  • 1 TABLESPOON Sugar
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 1 Egg Yolk
  • 7-10 Tbsp Icing sugar

Directions

    Chop the cardamom finely or use a mortar. Warm the milk. Dissolve yeast in it. Knead yeast mixture with flour, cardamom, sugar, olive oil and 1 pinch of salt to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes until it has doubled in volume. Roll out the yeast dough rectangularly (approx. 35 x 27 cm) on a floured work surface. Cut the dough sheet several times from both long sides to approx. 1/3 at a distance of 1-1.5 cm.

    Fold over the dough strands one after the other alternately towards the middle and press down slightly. Cover and let rise again for about 20 minutes. Whisk the egg yolks and 3 tbsp. water. Spread bread with it. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-25 minutes. Take out bread, let it cool down and dust with icing sugar
