Wash the tomatoes and cut off the lid. Hollow out the tomatoes. Drain the shrimps in a sieve. Wash the rocket and dab dry. Clean, wash and cut spring onions into rings.
Peel and halve the avocado and remove the core. Cut the flesh into sticks. Peel and dice garlic. Mix vinegar, oil, lime juice and garlic. Season with salt and pepper. Mix prepared ingredients and marinade and fill into the tomatoes.
Serve garnished with slices of lime and mint.
