Ingredients

Servings: 8
  • 7-10 Tbsp some + 75 g half-fat margarine
  • 60 g + 3 g diabetic sweetness
  • 2 Eggs (Gr. M)
  • 150 g Flour
  • 2 coated Tsp Baking Powder
  • 1-2 TABLESPOONS low-fat milk
  • 4 sheets white gelatine
  • 500 g cleaned strawberries
  • 150 g Whipped cream
  • 400 g Low-fat curd
  • 7-10 Tbsp liquid sweetener
  • 7-10 Tbsp Aluminium foil

Directions

  1. 1

Grease half of a fat pan (approx. 16 x 39 cm). Limit the open side with a rail made of multiple folded aluminium foil

  2. 2

Mix 75 g fat and 60 g sweetness until creamy. Stir in the eggs one by one. Mix flour and baking powder, alternating with milk. Spread on the fat pan. Bake in the preheated oven (electric cooker: 200 °C/recirculating air: 175 °C/ gas: level: 3) for 15-20 minutes. Allow to cool down

  3. 3

Soak the gelatine in cold water. Wash the strawberries and, except for a few, cut them into small pieces. Whip cream until stiff. Mix quark and sweetener. Squeeze the gelatine and dissolve over a mild heat. Stir in some quark, then stir in the remaining quark. First fold in cream, up to 2 tablespoons, then strawberry pieces

  4. 4

Cut the cake in half to make 2 smaller plates. Spread cream on one plate, place another plate on top. Chill for at least 4 hours. Cut the cake into 8 pieces. Decorate with the rest of the cream, strawberries and 3 g sweetness
