Cut 100 g butter into pieces. Mix flour, butter, 1 pinch of salt, 70 g sugar, 1 egg yolk and 2-3 tablespoons of cold water first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Wrap in foil and put in a cool place for about 30 minutes. Roll out dough (24 x 32 cm). Grease a tart mould with lift-off base (20 x 28 cm) and place the dough inside, press the rim. Cut off any excess dough. Prick the base several times with a fork.
Line with baking paper and fill with dried peas. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 15 minutes. Remove dry peas and baking paper and bake again for another 5 minutes. Let them cool down. Wash, clean and puree the strawberries. Add lemon juice and 3 tablespoons of sugar and fill up to 500 ml with water. Boil up the strawberry puree. Stir starch with a little water until smooth, thicken strawberry puree with it, bring to the boil again. Separate the eggs. Mix egg yolks and 2 tablespoons of hot cream, stir into the remaining cream. Pour cream bit by bit into the tart and chill for about 1 hour. Beat the egg whites until stiff, while pouring in 150 g sugar. Beat until the sugar is dissolved.
Boil up the strawberry puree. Stir starch with a little water until smooth, thicken strawberry puree with it, bring to the boil again. Separate the eggs. Mix egg yolks and 2 tablespoons of hot cream, stir into the remaining cream. Pour cream bit by bit into the tart and chill for about 1 hour. Beat the egg whites until stiff, while pouring in 150 g sugar. Beat until the sugar is dissolved. Spread the beaten egg whites on the strawberry pie and make tips with a spoon. Sprinkle with almond flakes. Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for 5-6 minutes. Remove and let cool off. Wash and halve 6-8 strawberries.
