Ingredients

  • 3 Eggs (size M)
  • 170 g + 3 tablespoons sugar
  • 1 pinch Salt
  • 75 g Flour
  • 50 g Cornstarch
  • 1 TEASPOON Baking Powder
  • 350 g Strawberries
  • 6 sheets Gelatine
  • 400 g Whole milk yoghurt
  • 250 g Whipped cream
  • 1 package red glaze
  • 12 pink meringue tuffs
  • 7-10 Tbsp Grease

Directions

    Separate eggs. Beat the egg whites and 4 tablespoons of water until stiff. Add 100 g sugar and salt. Keep beating until the sugar is dissolved. Stir the egg yolks into the beaten egg white. Mix flour, starch and baking powder, sieve onto the egg foam and fold in carefully.

    Grease a springform pan (26 cm Ø) and pour in the sponge mixture. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 25 minutes. Let the finished sponge cake cool in the mould for approx. 10 minutes, remove from the mould and let it cool down completely. Wash and clean the strawberries and puree 100 g. Soak the gelatine in cold water. Mix yoghurt, strawberry puree and 70 g sugar. Squeeze the gelatine and dissolve. Stir 3 tablespoons of yoghurt into the gelatine and stir into the remaining yoghurt. Cut the cake in half horizontally and place a cake ring around the lower cake base. Whip the cream until stiff and fold into the yoghurt. Spread the cream on the lower cake base and place the upper cake base on top. Chill the cake for at least 1 hour.

    Stir 3 tablespoons of yoghurt into the gelatine and stir into the remaining yoghurt. Cut the cake in half horizontally and place a cake ring around the lower cake base. Whip the cream until stiff and fold into the yoghurt. Spread the cream on the lower cake base and place the upper cake base on top. Chill the cake for at least 1 hour. Put 5 strawberries aside and cut the remaining strawberries in half. Remove the cake from the ring and generously cover with halved strawberries. Stir the cake glaze powder, 3 tablespoons of sugar and 1/4 litre of water until smooth and heat while stirring. Bring the icing to the boil briefly and spread over the strawberries from the middle. Chill the cake for another 20 minutes. Cut about 6 strawberries into thin slices and press them to the edge. Decorate the cake with meringue tuffs

    Remove the cake from the ring and generously cover with halved strawberries. Stir the cake glaze powder, 3 tablespoons of sugar and 1/4 litre of water until smooth and heat while stirring. Bring the icing to the boil briefly and spread over the strawberries from the middle. Chill the cake for another 20 minutes. Cut about 6 strawberries into thin slices and press them to the edge. Decorate the cake with meringue tuffs
