Strawberry-Lime Mousse

Ingredients

  • 3 Eggs (size M)
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 6 sheets white gelatine
  • 400 g Strawberries
  • 50 ml Lime juice
  • 125 g Whipped cream
  • 12 strawberries, 4 shashlik skewers and mint

Directions

    Separate eggs. Whisk the egg yolks, sugar and vanillin sugar with the whisk of the hand mixer until thick and creamy white. Soak the gelatine in cold water. Wash, clean, halve and drain the strawberries. Then pour into a tall mixing bowl and puree.

    Stir the strawberry puree and lime juice into the whipped egg mixture. Squeeze the gelatine. Dissolve at low heat. Stir 5 tablespoons of the fruit and egg mixture drop by drop into the gelatine. Then stir the gelatine into the remaining fruit egg mass. Place in a cool place for 3-5 minutes until the mixture begins to gel. In the meantime, beat the cream and egg whites separately with the whisks of the hand mixer until stiff. Fold first the cream and then the egg white into the gelling cream in portions. Divide into 4 dessert glasses. Put in a cool place for 2 hours.

    Place in a cool place for 3-5 minutes until the mixture begins to gel. In the meantime, beat the cream and egg whites separately with the whisks of the hand mixer until stiff. Fold first the cream and then the egg white into the gelling cream in portions. Divide into 4 dessert glasses. Put in a cool place for 2 hours. Place 3 strawberries on 4 shashlik skewers and place on the glasses. Serve decorated with mint as desired
