Drain the pineapple, catch the juice and cut the pineapple rings into small pieces. Drain the cranberries as well. Mix quark, pineapple juice, vanillin sugar, lemon peel and sugar.
Whip the cream until stiff and fold into the quark. Peel the chocolate with a peeler into small rolls. Put some cranberries and pineapple pieces aside for decoration. Layer cranberries, quark and pineapple in 4 portion glasses and decorate with remaining pineapple, cranberries, chocolate rolls with lemon balm as desired.
