Peel the pears and remove the core. Dice the flesh. Wash the lemon, rub dry and peel with a julienne peeler. Put aside. Squeeze lemon juice and put it into a pot together with wine and sugar. Add the pears and steam over medium heat for ten minutes, stirring occasionally. Drain and allow to cool.
Pour milk and cream powder into a high mixing bowl and stir briefly with the whisks of the hand mixer on the lowest setting. Then whisk at highest setting for three minutes until creamy. Whip the cream until stiff and fold half into the chocolate cream. Divide half of the pears between four dessert glasses. Add the chocolate cream and spread the remaining pears on top. Decorate the dessert with the remaining cream. Sprinkle with the lemon strips set aside and serve dusted with cocoa and lemon balm as desired
