Spicy chard soup

Ingredients

Servings: 4
  • 600 g Potatoes
  • 1 medium onion
  • 2 Garlic cloves
  • 1 (approx. 1 kg) large chard
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TSP Vegetable broth
  • 3 medium-sized tomatoes
  • 1-2 TABLESPOONS Pine nuts
  • 150 g Crème légère or sour cream

Directions

    Peel, wash and chop the potatoes. Peel and chop onion and garlic. Chard clean, wash. Cut leaves and stems separately into strips

    Heat the oil in a large pot. Brown the onion, garlic and potatoes in it. Steam chard stems briefly and season. Pour in approx. 1 l water, bring to the boil and stir in broth. Cover and simmer for 10-12 minutes.

    Wash, quarter, seed and finely dice the tomatoes. Add chard strips to the soup and simmer for another 5-7 minutes. Roast the seeds without fat, remove. Refine soup with crème légère and season to taste. Sprinkle seeds over it and slice parmesan cheese over it
