Spaghetti with scampi & dates

Ingredients

  • 600 g raw shrimps (fresh or frozen; without head, with shell)
  • 75 g Dates
  • 200 g cherry tomatoes
  • 2 Shallots
  • 2 Garlic cloves
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2-3 TABLESPOONS Olive oil
  • 1/4 l dry white wine
  • 200 g Whipped cream
  • 400 g Spaghetti
  • 2-3 stem(s) Oregano

Directions

    ##Shrimp## defrost if necessary. Remove from the shell except for the tip of the tail. Make a longitudinal incision in the back, remove the dark intestine. Wash shrimps and pat dry.

    ##Date## cut lengthwise, remove the stone. Cut dates into large pieces. ##Wash the tomatoes. Peel and finely chop shallots and garlic.

    Bring 3-4 l salted water (1 teaspoon salt per litre) to the boil. Heat oil in a pan. Fry the prawns in it in portions while turning for 2-3 minutes. Season with salt and pepper. Remove from the pan.

    Sauté the shallots and garlic in the frying fat. Add tomatoes and dates and fry for 2-3 minutes. Deglaze with wine, bring to the boil. Simmer at high heat for 2 minutes.

    Pour cream into the sauce, simmer for 8-10 minutes until the sauce thickens. In the meantime, add the noodles to the boiling salted water and cook according to the instructions on the packet. Stir from time to time.

    Wash oregano, shake dry and pluck the leaves. Add the shrimps to the sauce and heat. Season the sauce to taste. Drain the noodles and mix with the sauce and oregano.
