Spaghetti with basil pesto, meatballs and melted tomatoes

Ingredients

Servings: 4
  • 1 small onion
  • 1 Garlic clove
  • 400 g mixed minced meat
  • 1 TEASPOON Mustard
  • 1 egg (size M)
  • 4 TABLESPOONS Breadcrumbs
  • 4 TABLESPOONS Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Olive oil
  • 40 g Pine nuts
  • 500 g Tomatoes
  • 4 Stem(s) Basil
  • 400 g Spaghetti
  • 2 TABLESPOONS Pesto (Genovese)

Directions

    Peel onion and garlic and cut into fine cubes. Knead minced meat, onion, garlic, mustard, egg, breadcrumbs and milk. Season with salt and pepper. Shape into 20 meatballs. Heat oil in a pan.

    Roast the pine nuts in it until golden brown. Remove and fry meatballs in the fat on all sides for about 5 minutes. Wash, clean and roughly dice the tomatoes. Remove the meatballs and melt the tomatoes in the fat.

    Wash the basil, shake dry and pluck the leaves from the stalks. Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Drain noodles, mix pesto into the noodles.

    Arrange pasta, meatballs and tomatoes on plates and sprinkle with basil and pine nuts.
