Slivovitz chops with Tårana

Ingredients

  • 180-200 g + some flour
  • 2 Eggs (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g dried semi-soft plums without stone
  • 4 TABLESPOONS Butter
  • 4 Pork chops (200-250 g each)
  • 2 TABLESPOONS Oil
  • 1 TEASPOON clear soup
  • 2 TABLESPOONS Slivovitz
  • baking paper

Directions

    The day before for the grated dough (Tårana) 180-200 g flour, eggs and about 1 teaspoon salt first with a hand mixer, then knead with your hands to a firm dough. Grate the dough roughly on a household grater on a baking tray lined with baking paper. Spread evenly and dry overnight

    Soak plums in approx. 300 ml water for approx. 1 hour. Fry the grated dough in 2 tbsp. hot butter until golden brown. Take out

    Wash the chops, dab dry and turn them in a little flour. Fry in hot oil for 5-7 minutes per side. Season and remove. Add plums together with soaking water and broth to the hot frying fat and bring to the boil. Place chops on top and stew everything covered for about 5 minutes. Pour Slivovitz over it and flambé if necessary

    Put the fried dough in plenty of boiling salted water and simmer for about 10 minutes. Drain. Foam up 2 tablespoons of butter and pour over it. Arrange everything

    Drink: croatian. Red wine, for example Plancic from the island of Hvar, and a slivovitz
