Shrimp skewers on leaf spinach

Ingredients

Servings: 4
  • 4 Sticks of lemongrass
  • 24 (about 500 g; without head, with skin) raw prawns
  • 1/2 bunch parsley, 5 tablespoons oil
  • 6 TABLESPOONS Thai chili sauce (e.g. Wan Kwai;
  • 7-10 Tbsp sweet-hot chili sauce)
  • 7-10 Tbsp pepper, 1 garlic clove
  • 750 g leaf spinach
  • 250 g Mushrooms
  • 1 medium onion
  • 3 TABLESPOONS Soy sauce
  • 2-3 TABLESPOONS Sesame, salt

Directions

    Clean lemon grass, cut in half lengthwise. Peel the shrimps, except for the tail fins, and remove the intestines. Wash, dab dry and skewer 3 on 1/2 stick of lemon grass

    Wash and finely chop the parsley. Mix with 2 tablespoons of oil, 2 tablespoons of chilli sauce and pepper. Peel the garlic and press it in. Press the shrimps with it b

    Clean, wash and drain the spinach and mushrooms. Halve the mushrooms. Peel and chop onion. Fry with mushrooms in 1 tbsp. hot oil. Add the spinach and cover and let it collapse. Season with soy sauce and pepper

    Roast sesame seeds without fat. Fry skewers in 2 tablespoons of hot oil for 4-5 minutes, salt. Serve with spinach, sprinkle with sesame seeds. Serve the rest of the chilli sauce extra. Rice tastes good with it
