Sesame cod with orange and leek vegetables

  • 1 TABLESPOON hulled sesame seed
  • 1 large or 2 small leeks (leek)
  • 1 small red chili pepper
  • 1 untreated orange
  • 2-3 TABLESPOONS Soy sauce
  • 1 TEASPOON Cornstarch
  • 100 ml Vegetable broth
  • 50 g Basmati Rice
  • 7-10 Tbsp Salt
  • 2 TEASPOONS Oil
  • 175 g Cod fillet without skin
  • 7-10 Tbsp Pepper
  • 5 Stem(s) Coriander or parsley

Directions

    Brown sesame seeds in a pan without fat, place on a small plate. Clean the leek, cut into rings and wash thoroughly. Cut open the chilli pepper, scrape out the seeds. Cut the pod into pieces. Wash orange hot, rub dry, rub half of the peel. Halve the orange, squeeze 1 half, use the remaining 1/2 orange for other purposes. Mix juice, soy sauce, starch and stock

    Prepare rice in boiling salted water according to package instructions. Heat 1 tablespoon of oil in a saucepan. Steam the leek for 5-6 minutes while turning, add the chilli and steam briefly. Deglaze with soy-orange mixture, bring to the boil and simmer for 1-2 minutes

    Wash the fish, dab dry, halve if necessary. Heat 1 tablespoon of oil in a coated pan. Fry the fish for 5-6 minutes while turning, season with salt and pepper. Wash herbs, shake dry, pluck off leaves and chop. Take the fish out and roll in sesame seeds. Pour rice into a sieve, drain and stir in herbs. Arrange rice with fish and vegetables on plates
