Schmand-waffles with cherries

Ingredients

  • 1 glass (720 ml) Cherries
  • 1 package Pudding powder "Vanilla Flavor"
  • 50 g + 100 g sugar
  • 1 TABLESPOON Lemon juice
  • 125 g + 250 g whipped cream
  • 125 g + 250 g sour cream or crème fraîche
  • 2 packages Vanillin sugar
  • 250 g soft butter/margarine
  • 1 pinch Salt
  • 6 eggs , 500 g flour (Gr. M)
  • 1 package Baking Powder
  • 7-10 Tbsp Grease
  • 1-2 TABLESPOONS Icing sugar

Directions

    Drain the cherries and collect the juice. Mix the pudding powder, 6 tbsp. juice and 50 g sugar. Boil 400 ml water, lemon juice and the rest of the cherry juice. Stir in pudding powder and bring to the boil again briefly. Fold in cherries. Let cool down

    Whip 125 g cream and sour cream together until stiff, pour in 1 packet of vanilla sugar

    Cream the fat, 100 g sugar, salt and 1 packet of vanilla sugar with the whisks of the hand mixer. Stir in the eggs one by one. Briefly stir in flour, baking powder, 250 g cream and 250 g sour cream in alternating portions

    Grease and preheat the waffle iron. Place 1 1/2 tbsp. of dough in the middle of each waffle iron and bake until golden yellow. Bake about 20 waffles in total. Dust with icing sugar. Serve with compote and sour cream
