Ingredients

Servings: 4
  • 1/4 collar Sage
  • 2 Organic lemons
  • 2 Onions
  • 1 (approx. 1.6 kg) ready-to-cook chicken
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Olive oil
  • 500 g Sweet potatoes
  • 1 (approx. 600 g) small head cauliflower

Directions

    Wash sage, shake dry and pluck leaves from the stems. Wash 1 lemon, grate dry and quarter it. Peel and halve the onions. Wash the chicken, pat dry

    Carefully push sage leaves under the skin of the chicken. Season chicken inside and out with salt and pepper. Place lemon quarters and onion halves in the abdomen. Tie the ends of the legs together with kitchen string. Place the chicken on an oven rack and rub with 1 tablespoon of olive oil. Place the oven rack over the fat pan and cook in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: see manufacturer) for approx. 1 1/4 hours

    In the meantime peel, wash and slice the sweet potatoes. Clean the cauliflower, cut the florets from the stalk, possibly halve and wash. Wash 1 lemon, grate dry and cut into slices. Mix everything in a bowl with 3 tbsp olive oil, 1 tsp salt and 1/2 tsp pepper. 20-25 minutes before the end of the cooking time of the chicken carefully take out the fat pan and spread vegetables on it.
