Ingredients

  • 500 g Flour
  • 200 g Butter
  • 140 g Sugar
  • 2 Eggs (size M)
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 180 ml Milk
  • 1 cube (42 g) fresh yeast
  • 800 g sour apples
  • 7-10 Tbsp Juice of 1 lemon
  • 100 g sliced almonds
  • 7-10 Tbsp scraped pulp from 1 vanilla pod
  • 7-10 Tbsp Grease

Directions

    Put flour, 100 g soft butter, 60 g sugar, eggs, salt and lemon zest in a bowl. Heat 120 ml milk slightly, dissolve yeast in it, add and knead everything into a smooth dough.

    Cover and leave to rise in a warm place for about 30 minutes. For the filling, peel, quarter, core and coarsely grate apples, sprinkle with lemon juice. Mix with 80 g almonds. Heat 100 g butter, 80 g sugar, 60 ml milk and vanilla pulp until the butter has melted.

    Grease a springform pan (26 cm Ø). Knead the yeast dough again and roll out to a rectangle (30x40 cm). Spread with some butter-milk mixture. Drain the apple mixture, spread it on the dough plate, leaving the rim free.

    Roll up from the long side. Cut into about 12 slices and place in the mould. Cover and leave to rise again for about 10 minutes. Pour the rest of the butter-milk mixture over it and sprinkle with 20 g almonds.

    Bake in the preheated oven (electric: 175 °C/ gas: level 2) for 45-50 minutes. Allow to cool and remove from the mould.
