Rice pudding with fruits

Ingredients

Servings: 4
  • 1 can(s) (425 ml, 420 g, 250 g) Apricots
  • 250 g Strawberries
  • 2 TABLESPOONS Lime or lemon juice
  • 1 package Vanillin sugar
  • 4 TABLESPOONS Sugar
  • 40 g Almond slivers
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Aluminium foil
  • 500 ml Milk
  • 7-10 Tbsp grated peel of 1 untreated lime or lemon
  • 150 g Rice Flakes

Directions

    Drain the apricots and collect the juice. Halve the apricot halves. Wash, clean and halve the strawberries. Mix the fruit, lime juice, 4 tablespoons of apricot juice and vanilla sugar and leave to stand for about 30 minutes.

    Melt 2 tablespoons of sugar in a small pan, add almond slivers and caramelise briefly. Spread on oiled aluminium foil and let it cool down. Bring milk, remaining sugar and lime zest to the boil.

    Sprinkle in rice flakes. Cook for 1 minute while stirring. Remove from the heat and allow to swell for 2-3 minutes. Serve the rice warm or cold with the marinated fruits. Coarsely chop the brittle and sprinkle over the fruits.
