Ingredients

  • 60 g Butter or margarine
  • 175 g Flour
  • 100 ml Milk
  • 1/2 cube (21 g) Yeast
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease
  • 600 ml Milk
  • 4 TABLESPOONS Sugar
  • 1 Cinnamon stick
  • 150 g Rice Pudding
  • 2 Eggs (size M)
  • 2 packages Vanillin sugar
  • 7-10 Tbsp Sugar crystals

Directions

    Melt the fat for the dough. Sift the flour into a bowl. Warm milk lukewarm, dissolve yeast. Stir the fat, sugar and the yeast milk into the flour with the dough hooks of the hand mixer and work everything into a smooth dough. Cover the dough and let it rise in a warm place for about 30 minutes. In the meantime bring milk, sugar and cinnamon stick to the boil for the filling.

    Let the rice swell for about 40 minutes at low heat. Knead the yeast dough again and roll out into a circle (approx. 26 cm Ø) on a floured work surface. Place in a greased pizza or pie dish. Press down the edge. Let the dough rise for another 10 minutes. Remove the vanilla pod and cinnamon stick from the rice. Separate the eggs. Beat egg whites until stiff. Let vanilla sugar trickle in. Fold the beaten egg white into 1/4 of the rice pudding. Stir the egg yolks under the rest of the rice pudding and spread on the dough. Spread the egg whites over the rice pudding.

Serve sprinkled with sugar crystals
