Raw carrots with apricot and macadamia nuts

Ingredients

  • 50 g Macadamia nut kernels
  • 800 g Carrots
  • 150 g Apricots
  • 7-10 Tbsp Juice of 1 lemon
  • 1 1/2- 2 TABLESPOONS Sugar
  • 1 TEASPOON Oil
  • 7-10 Tbsp Chervil and lemon slices

Directions

    Coarsely chop the nuts, roast them in a hot pan without fat, take them out. Peel, wash and finely grate the carrots. Wash and halve the apricots, remove the stones. Cut the apricots into slices. Mix carrots, lemon juice, apricots, nuts, sugar and oil, season with salt and pepper. Leave to stand for about 30 minutes. Arrange on plates and garnish with chervil and lemon slices
