Ingredients

  • 100 g Flour
  • 2 packages Vanillin sugar
  • 1 Egg yolk (size M)
  • 1 pinch Salt
  • 250 g Sugar
  • 50 g Butter
  • 300 g frozen raspberries
  • 4 Eggs (size M)
  • 750 g Double cream cream cheese
  • 125 g Whipped cream
  • 50 g Cornstarch
  • 2 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Aluminium foil

Directions

    For the base, place flour, 1 packet of vanilla sugar, egg yolk, salt, 50 g sugar and butter in flakes in a mixing bowl. Knead first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Roll out the dough into a circle (26 cm Ø) on a floured work surface. Put the dough on the bottom of a greased springform pan (26 cm Ø) sprinkled with flour, press down and prick several times with a fork. Chill the base for about 40 minutes.

    Let the raspberries thaw at room temperature for about 40 minutes. Cream eggs, 200 g sugar and 1 packet of vanilla sugar. Add cream cheese, cream and starch and stir in. Fold in raspberries. Sprinkle the shortcrust pastry base with breadcrumbs, add the cheese mixture. Bake on the bottom shelf in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 1 1/4 hours. After approx. 45 minutes of baking time cover the cake with aluminium foil. Remove from the oven and place on a grid. Remove from the edge of the springform pan and let it cool down in the pan.

    Bake on the bottom shelf in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 1 1/4 hours. After approx. 45 minutes of baking time cover the cake with aluminium foil. Remove from the oven and place on a grid. Remove from the edge of the springform pan and let it cool down in the pan. Remove from the form and arrange on a plate. Delicious with crème fraîche
