Ingredients

  • 250 g Flour
  • 150 g Sugar
  • 1 pinch Salt
  • 2 packages Vanillin sugar
  • 5 Eggs (size M)
  • 50 g crushed hazelnuts
  • 125 g Butter
  • 375 g Raspberries
  • 250 g Apricots
  • 200 g Whipped cream
  • 1 package Almond-flavoured pudding powder
  • 25 g ground hazelnuts
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp chopped hazelnuts, raspberries, apricots and mint
  • 7-10 Tbsp Flour

Directions

    For the base, place flour, 75 g sugar, salt, 1 packet of vanilla sugar, 1 egg, nuts and butter in flakes in a bowl. Knead with the dough hook of the hand mixer. Then knead again with your hands to a smooth dough. Wrap in foil and put in a cool place for about 30 minutes. In the meantime, sort out the raspberries.

    Clean, wash and halve the apricots and remove the stone. Cut fruits into slices. Mix cream, remaining sugar and vanilla sugar, remaining eggs and pudding powder well with the whisk of the hand mixer. Roll out the dough on a floured work surface to a circle (30 cm Ø). Put it into a well greased tart tin (26 cm Ø) sprinkled with flour, pull up the rim and press it down and prick several times with a fork. Sprinkle with ground nuts, spread fruit on top and pour the egg cream over it. Bake in the preheated oven (electric oven: 175 °C/ gas: level 2) for 65-70 minutes on the bottom rack. If necessary, cover with foil halfway through the baking time. Remove from the oven and let it cool down on a grid.

    Sprinkle with ground nuts, spread fruit on top and pour the egg cream over it. Bake in the preheated oven (electric oven: 175 °C/ gas: level 2) for 65-70 minutes on the bottom rack. If necessary, cover with foil halfway through the baking time. Remove from the oven and let it cool down on a grid. Dust with icing sugar and serve decorated as desired with nuts, raspberries, apricot and mint. Whipped cream tastes good with it
