Mix quark, sugar, lemon juice, eggs, pudding and sauce powder to a smooth mixture. Line the bottom of a springform pan (26 cm Ø) with baking paper. Pour in the quark mixture and smooth it down a little. Bake in a preheated oven (electric cooker: 175 °C/ convection oven: not suitable/ gas: level 2) for 50-60 minutes. Carefully remove the cake from the edge of the springform pan with a knife and let it cool down in the pan on a cake rack for about 2 hours.
Remove the cake from the tin. Just before serving, spread apple sauce on the cake. Whip cream with vanilla sugar until stiff, spread on the cake. Keep cool until serving. Decorate with mint
