Ingredients

Servings: 18
  • 240 g Flour
  • 1 pinch Salt
  • 36 g Diabetic sweetness
  • 1 egg (size M)
  • 100 g Butter
  • 20 g ground almonds (without skin)
  • 250 g blue grapes without pips
  • 7 sheets white gelatine
  • 750 g Low-fat curd
  • 4 TABLESPOONS Lemon juice
  • 75 ml Mineral water
  • 7-10 Tbsp a few dashes of liquid sweetener
  • 250 g Whipped cream
  • 20 g flaked almonds
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Mint

Directions

    Place flour, salt, diabetic sweetener, egg, fat in flakes, ground almonds and 4-5 tablespoons of water in a mixing bowl and knead into a dough with the dough hooks of the hand mixer. Then knead again briefly with your hands to a smooth dough. Roll out the dough to a square (24 x 24 cm). Press it into a greased, flour-spread square springform pan (23 x 23 cm), pulling the rim up a little (it slides down during baking so that the bottom of the pan is filled exactly). Prick the bottom several times with a fork and refrigerate for about 30 minutes. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-18 minutes. Remove from the oven, place on a grid and let it cool in the mould. Wash and drain the grapes. Soak gelatine in cold water. Mix quark, lemon juice and mineral water with the whisk of the hand mixer. Season to taste with sweetener. Whip the cream until stiff. Squeeze the gelatine and dissolve over low heat. Remove from the heat and stir in 2-3 tablespoons of the quark mixture drop by drop. Then stir into the rest of the quark mixture. Fold in the cream in portions. Halve the grapes and fold them into the cream, except for a few for decoration. Pour onto the cooled base, smooth it down and put in a cool place for about 4 hours. Roast the almonds in a pan without fat until golden brown. Remove and put aside. Remove the cake from the tin, cut it into 18 slices and serve decorated with the remaining grapes, flaked almonds and mint

    You can exchange these ingredients: Prepare the dough with 50 grams of sugar instead of diabetic sweetener. Sweeten the quark mixture with 3 tablespoons of sugar instead of sweetener
