Quark crumble cake with cherries (diabetics)

Ingredients

  • 420 g Flour
  • 1/2 package Baking Powder
  • 70 g Diabetic sweetness
  • 5 Eggs (size M)
  • 150 g Butter or margarine
  • 1 pinch Salt
  • 500 g Low-fat curd
  • 1 package Pudding powder "Vanilla Flavor"
  • 7-10 Tbsp juice and grated rind of 1/2 untreated lemon
  • 4 TSP liquid sweetener
  • 350 g (720 ml; suitable for diabetics) pitted sweet cherries or 1 glass of cherries

Directions

    Knead flour, baking powder, diabetic sweetener, 2 eggs, fat and salt first with the dough hooks of the hand mixer, then work into crumbles with your hands. Mix quark, 3 eggs, pudding powder, lemon juice and zest. Season to taste with sweetener. Put 2/3 of the crumbles into a springform pan (26 cm Ø) lined with baking paper and press down slightly. Spread the quark mixture on top. Sprinkle with cherries. Spread the rest of the crumbles on top. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 45 minutes. Let them cool down

    You can exchange these ingredients:

    For the dough you can use 70 g sugar instead of diabetic sweetness. Replace the sweetener for the quark mixture with 1 packet of vanillin sugar and 3 tablespoons of sugar
