Quark cream cake

Ingredients

  • 125 g unpeeled almonds
  • 125 g Carrots
  • 4 Eggs (size M)
  • 100 g Sugar
  • 7-10 Tbsp juice and grated rind of 1/2 untreated lemon
  • 2 TABLESPOONS Flour
  • 1/2 TEASPOON Baking Powder
  • baking paper
  • 500 g Low-fat curd
  • 500 g Whipped cream
  • 175 g Sugar
  • 2 packages Vanillin sugar
  • 1 package (200 g) Gelin
  • 2 TABLESPOONS Lemon juice
  • 1 TABLESPOON Icing sugar

Directions

    Grind the almonds. Wash, peel and finely grate the carrots and squeeze them well in a kitchen towel. Separate the eggs. Beat egg whites until stiff, gradually add sugar. Add egg yolks one after the other and beat into the mixture.

    Stir lemon juice and zest into the egg foam mixture. Mix flour, baking powder and almonds and stir carefully into the egg foam mixture with the grated carrots. Pour into a springform pan (26 cm Ø) lined with baking paper only at the bottom and smooth it down.

    Bake in the preheated oven (electric: 175 °C / gas: level 2) for approx. 30 minutes and leave to rest for approx. 5 minutes in the switched-off oven. Place the springform pan upside down on a cake rack and let it cool down.

    Remove the bottom from the mould, cut through horizontally once and place the lower bottom on a plate. Place a cake or springform pan rim around it. Mix quark and 125 g cream. Mix the rest of the cream, sugar, vanillin sugar and gelatine with the whisks of the hand mixer.

    Stir in cream quark mixture and lemon juice by the spoonful. Spread the quark cream on the bottom cake layer, smooth it down and cover it with the top layer. Put the cake in a cool place for about 2 hours. Before serving, loosen the cake ring.

    Cut approx. 2 cm wide strips from cardboard and place them on the cake as a template. Dust with icing sugar and carefully remove the template. Makes about 16 pieces.
