Potato rösti with mushroom shredded

Ingredients

  • 200 g waxy potatoes
  • 1 Egg yolk (size M)
  • 1 TABLESPOON + 1 Tsp Mehl
  • 7-10 Tbsp Salt
  • 7-10 Tbsp grated nutmeg
  • 3 TABLESPOONS Oil
  • 50 g Mushrooms
  • 1 small onion
  • 150 g Turkey Breast
  • 50 g red pepper
  • 7-10 Tbsp Pepper
  • 100 ml Vegetable broth
  • 50 g Whipped cream
  • 1/2 bunch Chives

Directions

    Peel and wash the potatoes and grate them roughly in a bowl. Stir egg yolk and 1 tbsp. flour into the potatoes, season with salt and nutmeg. Heat 2 tablespoons of oil in a frying pan and fry about 4 small Rösti over medium heat until golden brown, turning them over.

    Remove the Rösti, drain on kitchen paper and keep warm.

    Clean, clean and halve the mushrooms. Peel and finely chop the onion. Dab meat dry and cut into strips. Clean, wash and roughly dice the bell peppers.

    Heat 1 tablespoon of oil in a frying pan, fry the meat well in it, remove and season with salt and pepper. Add mushrooms and onions to the frying fat and fry for 2-3 minutes, turning. Sprinkle with 1 tsp. flour and sauté briefly.

    Add stock and cream, bring to the boil. Add meat and paprika and simmer at low heat for about 5 minutes.

    Wash the chives, shake dry and cut into small rolls. Arrange rösti and shredded meat on a plate. Sprinkle with chives.
