Potato rösti with bacon, sausage and egg

Ingredients

Servings: 2
  • 500 g new potatoes
  • 7-10 Tbsp Salt
  • 5 Stem(s) Thyme
  • 50 g streaky smoked bacon
  • 1 red onion
  • 2 uncooked coarse bratwursts (e.g. Salscicce)
  • 3 TABLESPOONS Olive oil
  • 20 g Butter
  • 7-10 Tbsp Pepper
  • 1/4 collar Chives
  • 2 Tomatoes
  • 2 Eggs (size M)

Directions

    Wash the potatoes thoroughly and dice them coarsely. Cook in boiling salted water for about 10 minutes. Wash thyme, shake dry, remove leaves from the stems and chop. Cut bacon into strips. Peel and chop onion. Press the sausage meat out of the skin

    Put 1 tablespoon of oil in a hot pan. Fry the meat and bacon for about 5 minutes. Use a spatula to divide into small pieces. Remove from the pan

    Add butter and 2 tablespoons of oil to the pan and fry the potatoes for about 25 minutes, turning them over. Add onion cubes after about 15 minutes. Season with thyme, salt and pepper

    Wash the chives, shake dry and cut into small rolls. Wash, clean and chop the tomatoes. Put the sausage-bacon mixture and the tomato pieces into the pan. Fry for another 5 minutes. Press 2 holes in the potato mixture and beat in eggs. Cover and allow to set for 2-3 minutes until the egg white is firm. Serve immediately
