Peel and chop onion and possibly garlic. After about 10 minutes fry them. Whisk the eggs and season with salt, pepper and thyme. Pour over the potatoes and let them set. Slide on a flat lid and put back into the pan upside down. Brown from the other side. The omelette tastes hot or cold
