Cut butter into cubes. Put flour, butter, icing sugar, egg yolk, salt, approx. 3 tablespoons of ice water and lemon zest in a mixing bowl. Knead to a smooth short pastry. Lightly grease a tart mould (approx. 28 cm Ø) and press the short pastry into the mould. Prick the dough several times with a fork, sprinkle with breadcrumbs and chill for about 30 minutes. In the meantime, wash the plums, dab dry, stone and carve.
Place them in flakes on the shortcrust pastry. Mix cinnamon and sugar and sprinkle over the plums. Bake in the preheated oven (electric cooker: 200°C/ gas: level 3) for about 30 minutes. Serve hot or cold with whipped cream. Results in approx. 12 pieces
