Take the puff pastry out of the fridge. Wash and stone the plums. Remove the puff pastry from the packaging and unroll it on a baking tray with the baking paper. Roll up the edges a little, notch with the back of a knife. Whisk the egg yolk and milk and brush the edges with it. Sprinkle with 1 tablespoon of granulated sugar. Stir plum puree until smooth, pour onto the puff pastry and spread. Spread the plums on top. Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for 10-15 minutes. Let them cool down. Whip cream until stiff. Spread loosely on the strips. Sprinkle with nuts and 1 tablespoon of sugar crystals
